{Healthier} Banana Muffins

These may not sound spectacular but any time I make these muffins they are lucky to make it to the very next day. My 4 year old can eat an entire patch by herself if I let her and even my disliking-banana husbands enjoys them with a little butter.

(Not Your Regular)
Banana Muffins

3 large ripe bananas
6 tablespoons - 1/2 a cup of sugar
(I usually stick with the 6 tablespoons but if you like sweeter things, go with the larger amount)
1 egg
1 and a 1/2 tablespoons of melted coconut oil
(or oil of your choice)
1/2 cup of apple sauce
Optional, vanilla
1 1/2 cups of all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

  • Combine wet ingredients (bananas, apple sauce, egg, oil, vanilla) and sugar into a medium-large bowl. Mashing bananas first.

  • In a separate bowl, combine dry ingredients (flour, baking soda, baking powder, salt). I use my whisk to mix gently.

  • Add dry ingredients into the wet ingredients. Mixing to combine, taking care to not over mix. You can even sift the dry ingredients into the wet. If you over-mix the sides of your muffin will get rubbery.

  • Pour into your muffin tin.

  • Bake at 350 degrees for 18-25 minutes. (depending on your oven)

Banana Pumpkin Muffins

4 banans
3/4ish cup of pumpkin puree
3/4 cup of apple sauce
2 eggs
1/4 cup of white sugar
1/4 cup of brown sugar
(if you like for things to be sweeter, add in an extra 1/4-1/3 cup of sugar)
2.5 tablespoons of melted coconut oil
(or oil of your choice)
A generous splash of vanilla
3 cups of flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp pumpkin spice

  • Combine wet ingredients into a large bowl (bananas, pumpkin puree, apple sauce, eggs, oil, vanilla) and sugar. Mashing bananas first.

  • Combine dry ingredients into a separate bowl (flour, baking soda, baking powder, salt, pumpkin spice). I use my whisk to mix gently.

  • Add dry ingredients into the wet ingredients. Mixing to combine, taking care to not over mix. You can even sift the dry ingredients into the wet. If you over-mix the sides of your muffin will get rubbery.

  • Pour into your muffin tin.

  • Bake at 350 degrees for 18-25 minutes. (depending on your oven)
